Bovey Straight
We're very pleased with this. It's a north Devon-made cheese which the dairy generally sells at five months old, but which we mature - on the wooden shelves in our shop - to ten months, at which point it has developed a beautiful big glow of flavour.
It takes its name from a local landmark - the mile-long straight road along which most people approach our town. In a way the cheese is 'straight' in that it's a hard cow's milk cheese with no gimmicks. Not a cheddar, it would nonetheless take the place of one on a cheeseboard, and whilst it lacks the acidic edge that draws people to cheddar, it makes up for it with other dimensions of flavour!
