Mature Cornish Gouda
Gouda is the Netherlands' great contribution to European cheese, and this sweet, mellow cheese has been famous since the 12th century. Now Giel Spierings - part of a family that moved over from Holland to farm near Polruan in south east Cornwall - is making superb versions of this cheese here. It's available at various 'ages', and with several different flavourings.
At 10-12 months old, this version is classed as 'mature', and has developed quite a substantial flavour.
Pasteurised, not vegetarian.
