Old Winchester is made with a gouda-style recipe, but - aged to around 18 months - it becomes a thing all its own - a fantastically strong, nutty cheese which is hard, dry, dense and verging on crystalline in texture. Often used as a substitue for Parmesan, it can equally claim a place on the cheeseboard in its own right.

Vegetarian, Pasteurised.
