Lucky Marcel

Lucky Marcel is a soft cows' cheese inspired by two French cheeses - St Marcellin and St Felicien. Made by Feltham's farm in Somerset, it's a 'lactic' cheese (i.e doesn't use rennet to set the milk) which is ripened by a yeast which also creates the distinctive surface texture, and is ripened for just a couple of weeks.

Note! You may get 'wild' blue mould on this cheese. This is a penicillium mould which wasn't added to the milk as part of the recipe, but just found its way onto the cheese as it was maturing. It happens! And it's nothing to worry about.
